deep space

I am so happy for spring to be here but for some reason, lately, I have an underlying bad feeling in my gut... I am missing my best friend, and sometimes I hate to admit it. I hate to admit any dependence on another person. I just need him some days.








Do you ever think about how tiny we really are? It's amazing that we are just on a little planet floating in a gigantic galaxy, living our little lives...

Today was a pretty mellow day. I got a new vacuum, haha, then went over to my moms and played with Rose in the yard. Simple and the sun was shining so bright! Rose took a three hour nap and I painted for a good while.

i love him

This weekend was probably one of the best I've ever had. Yesterday Cody and I made a great dinner at home and went for an hour long walk with Rosey in the evening. Everything was perfect. Tonight we had our first date night in months away from Rose. We went to the mall and browsed, then for dinner, and then for a drive around downtown, looking at all the character homes, drinking coffee and listening to music.

meow

Haven't really written an "about me" post in quite some time...

A few things you may or may not know about me


  • I collect Buddha ornaments and rings.
  • I love kayaking, I can't wait for Rose to be old enough to take out on the ocean.
  • I am a lifeguard but I want to become a Mid Wife one day.
  • I am very inspired by folk music.

  • My great-grandmother is one of my greatest inspirations, she is the strongest, most beautiful woman I know.

roasted cauliflower soup

Ingerdients...

1 head of cauliflower, chopped
1 onion, chopped
2L chicken or vegetable stock
2 tbs fresh ginger, chopped
5 cloves garlic, chopped
2 tsp ground ginger
1tsp ground tumeric 
1 tsp ground cumin
1/2 tsp ground cloves
2 bay leaves
4 tbs butter
1/4 cup vegetable oil
salt & pepper

Preheat oven to 375 F. Melt the butter then add the ground ginger, tumeric, cumin, cloves, salt, and pepper (as desired). Chop the cauliflower into medium sized florets and mix into the butter mixture. Put the cauliflower onto a parchment paper lined baking sheet and roast for about 30 minutes. 

Meanwhile, heat a good sized soup pot at medium heat, add the oil and chopped onion, fresh garlic and ginger, and some salt and pepper. Once the cauliflower is done and the onions are translucent add together. Here is where I decide if I want more spice, usually I add some more tumeric and cumin. Add the stock and bay leaves and bring to a gentle boil, then let simmer for about 30 minutes to an hour. 

Next, you can leave the soup chunky, but I like to blend it a bit, if you have an emulsion blender you can use that or add half of the soup to a blender, blend and then add it back in. After I blend I like to let it simmer for another 10 minutes, then serve. Be sure to remove the bay leaves before blending. If it seems too thick you can add some milk or water, I prefer water, if you do add more liquid you'll want to simmer it for about 20 minutes longer.
